Chicken with rice

Chicken with rice
(for 2)

Ingredients:

For the rice:
1 cup long grained rice
Some peas
Some sweet corn
Olive oil, salt

For the chicken:
1 Chicken breast cut in small pieces
1 cup tomato juice from fresh tomatoes
1 teaspoon tomato paste
2 leaves of laurel
2 grains black pepper
Olive oil, salt

Rice:

Boil 3 cups of water with 4 Tbsp of olive oil and some salt. When the water starts boiling add the rice and lower the heat.
Boil the rice according to the instructions on the package. I usually prefer to boil it in very low temperature for around 15-20 minutes. (I like it a little overcooked ;) )
Don’t forget to stir once in a while. Just some minutes before the rice is ready add the peas and sweet corn and mix.

Chicken:


Put some olive oil in a saucepan, just enough to cover the bottom of it and heat it. When it is warm enough lower the heat and put the chicken. Let it cook from both sides until it changes color. Then add the tomato juice, the tomato paste and the laurel. Season with salt and pepper to taste. Add 3-4 cups of water. Bring to a low simmer. Cook in medium heat for about 30 minutes until the sauce is thickened.
